Grain distilling varieties such as Fairing are generally not as high yielding as mainstream Brewing and Malt Distilling varieties.
Total nitrogen applied should be in line with the end user contract specification (typically above 1.85% grain N). Trials have showed increasing total nitrogen has the biggest impact on grain nitrogen, but a later application can also help to boost it.
